Ingredients
  • 1 Pound 85% ground beef (best for flavor)
  • 1 Yellow onion
  • 2-4 TBSP butter
  • 8 Slices of bread
  • 4 Slices of cheese (I had Provolone, which worked out well)
  • Seasoning for beef -- salt & pepper to taste
Instructions
  1. Cut your onion in ½ and then cut thin slices from pole to pole. This is the opposite direction that you are used to cutting a slice, but it is they way they cut onions for "French Onion" soup and they brown up nicely that way. Melt 2 TBSPs of butter in a pan (I like using a cast iron one, but any heavy bottom pan will do). Add your onion slices and brown on med heat for about 10 minutes or until nicely browned. Set aside.
  2. You can fry your beef in the same pan, or if you prefer you can broil them at the same time you brown your onions. You may want to wipe it out if you use the same pan -- I was kind of into grease, last night, so I didn't.
  3. Butter your bread as you would for a grilled cheese sandwich. Put one slice of cheese and some of the grilled onions on the bottom slice (I find it's easier if I have that slice on my griddle already, butter side down). Add beef patty and top it with another slice of buttered bread. You could add another slice of cheese on top of the beef if you want also, I opted to only one. Grill on med to low heat letting the cheese melt and the bread toast up nicely.
