This is the King Arthur Bakealong recipe for Classic Baguettes. If I can make the crusty, wonders of the bread world -- so can you!

  • Make the starter (a.k.a. poolish)
  • Mix the following in a medium-sized bowl:
  • ½ cup cool water
  • 1/16 teaspoon active dry yeast or instant yeast
  • 1 cup King Arthur Unbleached All-Purpose Flour*
  • Mix the dough
  • Mix the following together to make a rough dough:
  • 1½ teaspoons active dry yeast or instant yeast
  • 1 cup + 2 tablespoons lukewarm water
  • all of the starter
  • 3½ cups King Arthur Unbleached All-Purpose Flour
  • 2 teaspoons salt
