Last night when I was searching through the pantry, freezer and fridge trying to figure out what to eat for supper I realized I still have a lot of my fall harvest items left. I don’t know if you are like this but I savor them and am kind of stingy sometimes with them — saving them for a “special meal”. Now it is the middle of March and I am planning my garden and we need to eat this stuff up.
Not only do we have produce in the freezer, we have all of those items that were “on sale” and I stocked up on. Oh, yeah and those extra casseroles that I made out of leftovers for another day. We need to get these things eaten up before they get into the “danger-zone”.
The One Week Challenge
As part of the Iowa Food & Family Project I have some beef and pork coupons to give away — $20 Beef, $10 Beef & 2 $10 Pork ones. So as I was perusing my freezer the bells went off — create a challenge to win them where the readers need to attempt a week of creating healthy meals from the food they already have at home. Of course you’ll need to go to the grocery store for milk, bread, etc., but the goal is to clean out those freezers, fridges & pantries this week.

To win one of the coupons you will need to post on this blog your experience and at least one of the recipes that you used this week during the challenge that was a success. We will start the challenge tomorrow, Thursday, March 15, 2018 through Wednesday, March 21st, 2018. Post your experience and a recipe in the comments of this blog by Midnight on Thursday, March 22, 2018. All posts will be entered into a drawing for the coupons and I’ll pick a couple of recipes to feature in another blog!

I actually just did this last week and this week. The best pantry creation I made was last Friday’s pizza. I used some half-used spaghetti sauce as the sauce and topped one of the pizza with some chopped ham, green peppers and onions I all had on the fridge.

Yum — I think I have all of those too! I see a pizza in our future — I probably have a can of pineapple chunks — so mine might become an Hawaiian Pizza! Thanks Val!
