Easy Fresh Salsa / Pico De Gallo
Nothing tastes as wonderful as fresh tomatoes from the garden and if I have some ripe tomatoes I try to incorporate them with almost every meal. Tuesday night is taco night at our house and instead of the purchased salsa for our chips I made a quick and easy fresh salsa, that my husband called "magical". The "magic" ingredient is really just the fresh garden tomatoes -- you just can't replicate that flavor. Here is the simple recipe for my fresh salsa (Pico De Gallo). Fresh Salsa / Pico De Gallo Save Print Prep time 15 mins Total time 15 mins Beautiful summer tomatoes make this simple fresh salsa.. Author: Mary Lovstad Recipe type: Appetizer Cuisine: Mexican Serves: 2 to 4 servings Ingredients 1 cup diced fresh tomatoes -- Roma or other meaty tomatoes -- quartered cherry tomatoes work great also 2 tablespoon finely chopped fresh onion 1 to 2 tablespoons finely chopped jalapeno 1 clove minced garlic Juice of ½ fresh lime 2 tablespoons fresh cilantro or parsley Instructions Dice tomatoes and onions Smash garlic clove and mince Finely chop the jalapeno - this is approximately one small one without seeds (seeds will intensify the heat, so I leave that to your discretion) Other types of hot peppers can be used with care. Lightly sprinkle with Kosher or Sea Salt and fresh ground pepper. Add chopped herbs-- I am not a cilantro fan, so I normally use parsley, however in the picture below one of my herbed salt mixtures in lieu of regular salt.
