I am fortunate, I have plenty of good food in my fridge, pantry, and freezer. Living on the farm and just coming out of winter, you are used to stocking up in case you get stranded for days. However, I have run low on one of my favorite snacks — CRACKERS. I love all kinds of crackers, straight up, with cheese, peanut butter, bacon jam — whatever! So the search was on to find some easy crackers with only a few ingredients.
I started my search looking for a cheese cracker — one that might satisfy me, as well as, a toddler missing those cute little goldfish crackers. I tried this one today Homemade Cheese Crackers from Sally’s Baking Blog — it came together in 5 minutes but did use 1 1/2 cups of fresh hard or semi-hard cheese and 6 tablespoons of butter, so I’ve found some additional ones that use fewer fresh ingredients. These turned out delightful. You can cut them into squares, but I decided we could use little love and used a miniature heart cookie cutter. This would be a fun project with your kids.
Several of the recipes use oil, flour, herbs or other spices. Reminder if a fresh herb is called for you can substitute for a dry herb…use much less — 1/2 as much for an herb that is not ground and 2/3’s as much if it is ground — start low and add a little more if you need to with dry herbs.
