Easy Butter Pecan Ice Cream
My husband would eat ice cream for every meal if I let him, so for Father's Day this year I gave him a Cuisinart Electric Ice Cream maker. However, he has yet to make any ice cream -- so I guess the gift was really, I will make him homemade ice cream every week. Butter Pecan is one of his favorites and I have struggled with many of the custard recipes -- there is a real trick to not getting scrambled eggs in your ice cream with a custard base -- consequently, I have had to sieve several batches in order to save all of those expensive ingredients. Don't tell Eric… After some experimenting, I've found an easier recipe that balances the sweet, creamy ice cream with the salty, buttery pecans. Here is my recipe. Easy Homemade Butter Pecan Ice Cream Save Print Prep time 30 mins Cook time 2 hours Total time 2 hours 30 mins Nothing is as good as homemade ice cream on a hot summer day! Make this easy Butter Pecan ice cream this weekend! Author: adapted by Mary Lovstad Recipe type: Dessert Cuisine: American Serves: 6 servings Ingredients 2 cups heavy whipping cream 2½ cups half and half 1 cup chopped pecans ½ cup brown sugar ½ cup white sugar ½ teaspoon Kosher salt 4 tablespoons unsalted butter 1 Vanilla bean (Vanilla Extract can be substituted -- 1 tsp) Instructions Put cream and half and half in a large microwave safe bowl (I like to use a large batter bowl that has a lid), set aside.
